Yesterday, I hastily knocked up a batch of banana muffins just before the last of our bananas ripened beyond recognition. I used a recipe from a good friend which is kind of healthy:
Kinda Healthy Banana Muffins (or Loaf)
2 tsbp melted Flora Original
1 tbsp milk
2 mashed bananas
1 medium eggs
225g self-rasising flour
110g sugar
1/2 tsp bicarb of soda
Optional: chocolate chips
Preheat oven 200 degrees C
Grease loaf tin or prepare muffin cases
Mix ingredients
Pour into tin or spoon into cases
Bake for 15-20 minutes (muffins) or 25 – 35 minutes (loaf)
Leave to cool
