- Fish and Prawn Korma – we had this last night as I was using up a couple of tilapia fillets and extra large king prawns which each would not have been enough for a meal but worked well together with coconut milk and curry paste served with curried cauliflower and broccoli, coconut rice and poppadums.
- Steak fajitas – fajitas are definitely a family favourite and very easy to do dairy-free as Austin just has his own cheese and replaces sour cream with mayo!
- Cajun Dirty Rice from Pinch of Nom – Evelina made this for the family (with just a little bit of supervision/interference from me). We hadn’t had it for ages and it was delicious. Back in rotation now!
- Fish tacos – another family favourite using those brilliant tilapia fillets from Costco. It is so delicious, light, and satisfying, and pretty healthy if you go easy on the mayo/oat cream sauce which I make using the Oatly Creme Fraiche to make it Austin-friendly.
- Breakfast for Dinner – Waffles, eggs, bacon, fruit, and maple syrup. What’s not to like? This is definitely a once-in-a-while treat!
